Loaded Mashed Potato Casserole
Ingredients:
- 5 pounds Russet potatoes, peeled and diced
- 1/2 cup unsalted butter
- 8 ounces cream cheese, softened
- 1 cup sour cream
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound bacon, cooked and crumbled
- 2 cups cheddar cheese, shredded
- 1/4 cup green onions, chopped
Instructions:
- Preheat your oven to 350°F.
- In a large pot, bring the diced potatoes to a boil. Reduce the heat and simmer for 15-20 minutes, or until the potatoes are fork-tender.
- Drain the potatoes and return them to the pot. Add the butter, cream cheese, sour cream, milk, garlic powder, onion powder, salt, and black pepper. Mash the potatoes until smooth and creamy.
- Stir in half of the crumbled bacon and 1 1/2 cups of shredded cheddar cheese.
- Spread the mashed potato mixture into a large casserole dish. Top with the remaining crumbled bacon and shredded cheddar cheese.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly. Top with chopped green onions before serving.
