Ingredients:
- 2 pounds potatoes, peeled and cut into small pieces
- 1 pound cheese, grated (traditionally Tomme d'Auvergne is used, but any cheese with good melting properties will work)
- 1 cup whole milk
- 1/2 cup heavy cream
- 4 cloves garlic, minced
- 1/2 teaspoon salt
Directions:
- Boil the potatoes for about 20 minutes, or until they are soft.
- While the potatoes are boiling, heat the milk and cream in a separate pot over low heat.
- Add the minced garlic and salt, and stir until well combined.
- When the potatoes are ready, drain them and return them to the pot.
- Add the milk mixture and stir to combine.
- Using a whisk or a hand mixer, beat the potatoes until they are smooth and creamy.
- Add the grated cheese, a little at a time, and continue to mix until it's all melted and well combined.
- Keep stirring until the cheese stretches and the mixture becomes elastic, this is the signature characteristic of Aligot!
